If it's not, entirely Holy Spirit inspired, and inerrant, how can we be sure of our salvation and inclusion into God's Covenant, to the Jew first, and then to the Gentiles?

If Revelation is pure symbology, as they say, and deny Daniel’s prophecy and all the promises made to Israel in the OT and NT, then whose to say the resurrection is not symbolic as well?

Acts 10 shows that some things certainly changed. Here's how I see it: whether they've changed or haven't isn't really for me to know, or to do anything about. I'm reminded of what Jesus told the disciples who questioned if one of them would never die: "what is that to you? You follow me." So it's not really my business what Jews do.
It is my business what I do! And to some degree I must follow, as you call it, replacement theology if I'm to claim to be a child of God. I'm certainly not a Jew, and can't follow much of what they did. In fact, trying to do what they did has prevented me from doing what God's told me, as a non-Jew, to do. I must trust Jesus knew what He was about to say, "I did not come to replace the law, but to fulfill it."
Not all Arabs are Christians. Not all Jews believe in Jesus. And not all Christians hate Arabs. What does this have to do with replacement theology? All over the map...please explain.

Paul accepted that Jesus Christ is God and Messiah, and strove mightily to keep Christ's commandments.
Hebrews 8: 6-9
"Now He has obtained a more excellent ministry, inasmuch as He is also Mediator of a better covenant, which was established on better promises. For if that first covenant had been faultless, then no place would have been sought for a second. Because finding fault with them, He says:
'Behold, the days are coming, says the Lord, when I will make a new covenant with the house of Israel and with the house of Judah — not according to the covenant that I made with their fathers in the day when I took them by the hand to lead them out of the land of Egypt; because they did not continue in My covenant, and I disregarded them', says the Lord."
And as for the statements about Anti-Semitism, I could easily say the same about you people. Evangelical Zionists often have an intense hatred of Arabs in their hearts unbefitting of any Christian. If you're trying to portray the traditional teachings of the Christian Church over the last 2,000 years as "Anti-Semitism", then it's only fair that your opponents can turn it around and say Dispensationalism/Evangelical Zionism etc. comes from bloodlust against Arabs and a desire for their genocide.
